Hissing at your cat will alert them to your displeasure, but they may not understand why you have done so – biting can be for many reasons, including simple play.

A more effective strategy is to understand why your cat is biting, provide them with lots of appropriate toys to chase, pounce, and bite and make sure you don’t allow play with people to escalate into excitement and biting.
